Five-veg ketchup dip
Suitable for vegetarians
Serves 10
Preparation time 50 minutes
Ingredients
  • 4tbsp olive oil
  • 1 medium onion
  • 150g carrots
  • 150g celeriac
  • 150g swede
  • 1tbsp chopped fresh lemon thyme
  • 3tbsp rice or cider vinegar
  • 700g jar Asda passata
  • vegetable sticks
  • pitta bread
Method
1 Peel and roughly chop the vegetables. Heat the oil in a large pan, add the veg and thyme and stir until coated. Turn the heat down and sweat for 20 minutes until soft and sweet, stirring regularly.

2 Add the vinegar and reduce over a low heat for 2 minutes. Pour in the passata and simmer for about 5 minutes.

3 Leave to cool, then whizz in a blender or liquidiser until smooth. Serve with veg sticks and pitta bread for dipping. Store the rest of the ketchup in the freezer.
