Ingredients
- 4 tomatoes, deseeded and chopped
- 1 red onion, diced
- 1 small bunch coriander, finely chopped
- 1 small bunch parsley, finely chopped
- Juice of ½ lemon
- 1tbsp olive oil
- 250g new potatoes, washed and sliced
- 2 x 130g salmon fillets
- 1 x 227g pack Asda asparagus
Method
1 An hour before your mealtime, prepare the herby tomato mixture by mixing together the tomatoes, onion, coriander, parsley, lemon juice and olive oil. Set aside.
2 About 15 minutes before you want to eat, set up a three-tiered steamer and, when the water is simmering, put the potato slices on the bottom tier.
3 After 3 minutes, add the salmon on the second tier. After another 6 minutes, add the asparagus on the top tier and steam for a final 3 minutes.
4 Serve the salmon, asparagus and potatoes immediately, topped with the tomato mixture.
