To save time, use a bag of prepared salad with the tangy dressing.

Ingredients
- ½ cucumber, cut into matchsticks
- 5 spring onions, including tops, sliced
- 1 red onion, sliced into 2mm rings
- 1 mango, cut into matchsticks
- 6 sprigs mint, roughly chopped
- Small bunch coriander, roughly chopped
- 1 sweet potato, peeled and cut into matchsticks
- 1 red chilli with seeds, sliced into rings
- 1 fillet beef steak
- For the dressing
- 4tsp rice vinegar
- Juice of 1 lime
- 2tsp fish sauce
- 1tbsp sugar
Method
1 Tumble together the cucumber, spring onions, red onion, mango, herbs, sweet potato and chilli in a large bowl.
2 To make the dressing, mix the vinegar, lime juice, fi sh sauce and sugar. Pour over the vegetables, mix together and leave to wilt while you cook the meat.
3 Pan-fry the steak until it is just pink, then cut into strips. Arrange the steak strips on top of the veg and serve at once.
