Crushed ice made with lime juice gives this dessert an unusual twist.

Ingredients
- For the crushed ice
- 2tbsp unrefined sugar
- Juice of 4 limes
- For the fruit
- 1 pineapple, peeled, cored and sliced
- 4 nectarines or peaches, halved
- 2 limes, halved
- 1tbsp olive oil
Method
1 Prepare the crushed ice two hours before you need it. Add the sugar to the lime juice and 50ml water and stir until dissolved. Pour into an ice-cube tray and freeze.
2 When ready to serve, lightly rub the fruit with the olive oil. Heat the griddle pan until very hot, add the fruit and cook on both sides until lightly charred.
3 Divide the hot fruit between serving plates. Crush the frozen lime ice cubes, place on top of the fruit and serve at once.
