Ingredients
- 225g self-raising flour
- Pinch of salt
- 55g butter
- 30g strong Cheddar, grated, plus extra for topping
- Handful of Asda fresh parsley, chopped
- 1 egg, beaten
- 150ml milk
Method
1 Preheat the oven to 200C/Gas 6. Lightly grease and flour a baking sheet
2 Sieve the flour and salt into a bowl. Rub the butter into the flour until it resembles fine breadcrumbs. Stir in the grated cheese and parsley.
3 Put the beaten egg in a measuring jug and make up to 150ml with milk. (Save any leftover milk for glazing the scones.) Make a well in the middle of the flour and pour in the milk mixture. Mix to a soft dough with a knife.
4 Spoon the mixture on to the prepared baking tray in six heaps. Brush the tops of the scones with a little milk, sprinkle over a little extra grated cheese and bake for 7 to 10 minutes, until well risen and brown. Leave to cool on a wire rack or serve warm. The scones can be frozen in freezer bags or a freezer-proof container.
