Ingredients
- 150ml natural low-fat yogurt
- 1tsp Asda ground coriander
- 1tsp Asda cumin
- 1 clove garlic, crushed
- Zest and juice of 1 lemon
- 4 pork chops
- 750g sweet potatoes, peeled and cubed
- 1tbsp olive oil
Method
1 Mix together the yogurt, ground coriander, cumin, garlic, lemon zest and juice in a shallow, non-metallic dish. Put the pork chops in the dish and coat in the marinade. Cover and leave to marinate in the fridge for 4 hours or overnight.
2 Preheat the oven to 200C/Gas 6. Toss the sweet potato cubes in the olive oil and season. Put on a baking tray and bake for 25 to 30 minutes.
3 Meanwhile, heat the grill to medium. Grill the chops for 7 to 8 minutes per side until cooked through, brushing with the marinade. Serve with the sweet potatoes, garnished with chives if you wish.
