Suitable for vegetarians
An amazing pud that’s as clever as it’s luscious
The meringue insulates the ice cream and baking it in a hot oven seals the surface, too. Trust us!
Serves 6
Preparation time 15 minutes
Ingredients
  • 500ml strawberry ice cream, shaped into a block
  • 200g Asda flan case
  • 1 quantity meringue mixture (see 'Basic Swiss meringue' for meringue recipe)
Method
1 Preheat the oven to 230C/Gas 8. Put the ice cream on top of the flan and cut around the edge, leaving a 2.5cm border.

2 Put the flan on a baking sheet and spread the meringue over the ice cream, leaving no gaps.

3 Bake immediately for 3 to 4 minutes until golden brown. Serve at once.
