This tasty salad will provide you with the recommended
one-a-week portion of oily fish. The 'good' oils found in
these fish are thought to help reduce the risk of both heart
disease and strokes. Crunchy, peppery watercress adds a zing
to the salad and is a good source of calcium and iron.

Ingredients
- 2 small cos lettuces, washed and drained
- 200g cherry tomatoes, halved
- 85g bag Asda watercress
- ½ cucumber, finely sliced
- 4 smoked mackerel fillets
- 70g pack croutons
- For the dressing
- 3tbsp olive oil
- 1tbsp red wine vinegar
- 1tbsp lemon juice
- Pinch of sugar
Method
1 Chop the lettuce leaves into large pieces and scatter over four plates. Divide the tomatoes and watercress between the plates. Scatter the cucumber over, flake the mackerel on top, and scatter over the croutons.
2 To make the salad dressing, put the olive oil, red wine vinegar, lemon juice and sugar into a measuring jug and whisk together with a fork. Drizzle the dressing over each plate of salad or serve separately in a jug.
