Herby tuna rice
Tuna is rich in good fats and protein, while rice is a wonderful source of energy as well as some protein, a little fibre and vitamins.
Serves 4
Preparation time 30 minutes
Ingredients
  • 4 rashers streaky bacon, finely chopped
  • 1tsp olive oil
  • 1 onion, finely chopped
  • 1 courgette, finely diced
  • 1 clove garlic, crushed
  • 150g Asda basmati rice
  • 300ml vegetable stock
  • 100g Asda frozen peas
  • 185g can Asda tuna in oil, drained
Method
1 Fry the bacon in the oil in a pan; remove and set aside. Add the onion, courgette and garlic and cook for a few minutes. Add the rice and stock, bring to the boil, cover and simmer for 12 minutes, until the rice is cooked and the stock absorbed. Meanwhile, cook the peas according to pack instructions.

2 Remove the rice from the heat. Flake the tuna and bacon on top, scatter the peas over, cover and leave to stand for 10 minutes before serving.
