Fisherman’s rice
Serves 4
Preparation time 30 minutes
Ingredients
  • 1tbsp olive oil
  • 1 clove garlic, crushed
  • 225g Asda long grain rice
  • 400g can Asda thick cut chopped tomatoes
  • 540g pack Asda frozen white fish fillets, thawed
  • Milk, to cover
  • ½ x 340g jar Asda pitted black olives, halved
  • ½ x 250g bag Asda fresh spinach leaves, washed and finely chopped
Method
1 Heat the oil in a pan and gently fry the garlic until just soft. Add the rice and tomatoes, then fi ll the tomato can with water and pour into the pan. Bring to the boil, reduce the heat and simmer for 10 minutes, covered. Add another can of water and cook for 10 minutes, until all the liquid has been absorbed.

2 Meanwhile, put the fi sh fi llets in a pan, add enough milk to cover, and season to taste. Bring to the boil, reduce the heat and simmer, covered, for 8 to 10 minutes, until the fi sh is cooked. Remove from the heat and set aside.

3 Add the olives and spinach to the rice, stir through and cook for a few minutes until the rice is cooked. Drain the milk from the fi sh. Flake the fi sh into the rice, stir through and serve.
