If you’re watching the calories, this
soup is still delicious without the
crème fraîche or yogurt. A bowl of Watercress soup provides over a third of your daily vitamin C requirement.

Ingredients
- 1 onion, finely chopped
- 2tsp olive oil
- 2 potatoes (approx 300g), peeled and diced
- 1.2-1.5 litres good-quality vegetable stock
- 2 x 85g bags Asda watercress
- 4tbsp Asda Good for you! crème fraîche or Asda Good for you!
- Greek-style natural yogurt
Method
1 In a large, heavy-based pan, fry the onion in the oil for 5 minutes, until soft. Add the diced potato and cook for 2 minutes, stirring. Add 1.2 litres of the stock and season to taste. Bring to the boil and simmer until the potatoes are soft.
2 Add both bags of watercress and heat the mixture through, stirring, for 3 minutes. Remove from the heat, cool slightly and liquidise. Add enough of the remaining stock to achieve the consistency you like.
3 Serve the soup in warm bowls, with a tablespoon of Asda Good for you! crème fraîche or Greek-style yogurt swirled into each.
