Sesame fish bites
These tasty fish bites are a great source of protein and omega 3 essential fatty acids. And believe it or not, canned potatoes can provide four times more calcium and three times more iron than fresh potatoes boiled in unsalted water! The sesame seed and breadcrumb coating on the balls adds great crunch.

Ingredients
  • 1tbsp olive oil, plus extra for frying
  • ½ onion, finely chopped
  • 1 clove garlic, crushed
  • 300g can Asda Jersey Royal new potatoes, drained
  • 2 x 125g cans Asda mackerel fillets in brine, drained and rinsed
  • 50g Asda canned petit pois, drained and rinsed
  • 2tsp soy sauce
  • 75g fresh breadcrumbs
  • 25g sesame seeds
  • Plain flour, for coating
  • 1 beaten egg, for dipping
  • 315g jar Asda spicy tomato pasta sauce
Method
1 Heat the oil in a nonstick frying pan and lightly sauté the onion and garlic for 3 to 4 minutes, until soft. Add the potatoes and heat for 2 minutes more, stirring. Transfer the mixture to a bowl and mash. Add the mackerel fillets, peas and soy sauce and mix well. Season with freshly ground black pepper and chill for 30 minutes (this will make the mixture easier to handle).

2 Mix together the breadcrumbs and sesame seeds and pour them onto a large plate. Divide the fi sh mixture into 16 walnut-sized balls and dip each one in the fl our, followed by the egg, and fi nally the breadcrumbs.

3 Heat a little olive oil in a frying pan and fry the balls in batches for 5 to 7 minutes on each side until they are crispy. Meanwhile, pour the spicy tomato sauce into a small pan and heat for a few minutes, stirring occasionally, according to the instructions. Serve the balls with the sauce as soon as it’s piping hot.

4 Top Tip - Children may prefer these made with milder-tasting canned salmon instead of mackerel - or choose Asda's delicious canned mackerel in tomato sauce for a more tangy, fruity flavour. Canned mackerel and salmon are both sources of vital omega 3 oils.
