Hot or cold, this easy-to-make tart is a winner

Ingredients
- 1 large red onion, halved and thinly sliced
- 2tbsp olive oil
- 1tbsp fresh thyme leaves, plus a few sprigs for garnish
- 340g frozen puff pastry, thawed
- 150g Caerphilly or Lancashire cheese, grated
- 6 pitted green olives, halved
- 220g pack baby plum tomatoes, quartered lengthways
Method
1 Preheat oven to 200C/Gas 6. Cook onion in oil until golden. Add thyme leaves, set aside. Roll pastry to a 22 x 34cm rectangle, put a baking sheet. Score a line round the edge, 2cm in.
2 Spread onion over pastry, within scored line. Sprinkle on cheese and scatter on olives and tomatoes. Bake for 20 minutes and garnish with thyme sprigs.
