Easy to put together, this filling salad is packed with vitimins, fibre and protein, and makes a tasty lunch.

Ingredients
- 1tbsp olive oil
- Small red onion, finely chopped
- 1 clove garlic, crushed
- 2 x 300g cans Asda cannellini beans, drained and rinsed
- 400g can spinach, drained and rinsed
- Handful of Asda fresh flat-leaf parsley, chopped
- 185g can Asda tuna chunks in spring water, drained
Method
1 Heat the oil in a nonstick frying pan and sauté the onion and garlic over a low heat for 2 to 3 minutes.
2 Add the beans to the pan. Warm the mixture through for about 2 minutes, then stir in the spinach and fl atleaf parsley, heating gently until they are warm, too.
3 Transfer the salad to a warmed serving bowl and flake in the tuna. Season with freshly ground black pepper and serve immediately with crusty bread.
4 Top Tip - Try fat, soft butter beans instead of cannellini beans to give a different texture to this salad. Salmon, mackerel or even kipper fillets are as tasty as tuna in this salad - drain the fish well before flaking, especially if it's canned in oil.
