Nectarine granita
Suitable for vegetarians
Serves 4
Preparation time 15 minutes
Plus freezing time
Ingredients
  • 2 large ripe nectarines (or peaches), peeled and stoned
  • 300ml cranberry and raspberry juice
Method
1 Purée the nectarines in a food processor or blender until smooth. Add the juice and whizz until thoroughly blended.

2 Transfer the mixture to a freezer-proof container, cover and put in the freezer for 1 to 2 hours or until crystals have formed around the edges.

3 Beat the crystals into the mixture with a fork and return to the freezer. Repeat three times at hourly intervals until the granita forms large frozen crystals. Serve at once.

4 Top Tip - To speed up freezing time, chill the juice before use, and cool the container in the freezer before filling.
