A beautiful gammon joint, zinging with flavour

Ingredients
- 1 x 1.75kg Asda smoked gammon joint
- 2tsp whole cloves, optional
- 2tbsp redcurrant jelly
- Grated zest and juice of ½ orange
- ½tsp Dijon mustard
Method
1 Put gammon in a large pan, cover with cold water. Cover pan, bring to the boil, simmer gently for 1½ hours. Drain.
2 Preheat oven to 200C/Gas 6. Cut rind off the gammon (if it has one) and score the fat in a diamond pattern with a sharp knife. Stud fat with cloves.
3 Place joint in a roasting tin. Put jelly, zest, juice and mustard in a small pan and stir over a low heat until blended. Brush over joint and cook in the oven for another 20 minutes.
