Ingredients
- 1 each red, green and yellow pepper, deseeded and quartered
- Sunflower oil, for frying
- 1 onion, diced
- 2tsp mild chilli powder
- 2 plum tomatoes, chopped
- 1tsp tomato purée
- 50g each Asda kidney beans,
- Asda haricot beans, Asda blackeye beans, drained and rinsed
- 6 wraps, to serve
Method
1 Preheat oven to 180C/Gas 4. Roast the peppers for 20 minutes. Leave to cool then slice thinly.
2 Meanwhile, warm a little oil in a pan; cook the onion and chilli powder for a few minutes, until onion is softened. Add the tomatoes and purée; cook for a few minutes, then add the beans. Mix and cool.
