Ingredients
- 1tbsp sunflower oil
- 2 Asda fillet steaks
- 1 small onion, very finely chopped
- 2 rashers of back bacon, finely diced
- 150g mushrooms, finely chopped
- 1 clove garlic, crushed
- 1tbsp double cream
- 8tbsp fresh white breadcrumbs
- 2 sheets ready-rolled puff pastry
- 1 egg, lightly beaten
Method
1 Heat oil in a nonstick frying pan, add steaks and cook over a high heat for 2 minutes on each side until browned. Transfer to a plate, leaving the fat in the pan.
2 Return frying pan to a high heat, add onion, bacon and mushrooms and cook for 6-8 minutes, stirring often until mixture has softened and reduced. Stir in garlic and cream, and cook for 1-2 minutes. Remove from heat and stir in breadcrumbs. Season well. Leave to cool.
3 Preheat oven to 200C/180C Fan/Gas 6. Cut out 4 rounds of pastry, at least 4cm wider than fillet steaks. Take 2 pastry rounds, put a fillet on top of each, and spread the steak with mushroom mixture. Brush pastry edges with beaten egg. Cover each steak with a remaining pastry round, pressing pastry edges together to seal sides, enclosing steaks. Brush parcels with beaten egg. Put onto a baking tray lined with baking paper and bake in preheated oven for 12-15 minutes or until cooked to your liking. Allow to rest for 5-10 minutes before serving. Serve with asparagus tips and baby carrots.
