Fresh and flavoursome – serve with seasonal veg

Ingredients
- 2 Asda extra special unwaxed Lemons
- 2tbsp clear honey
- 2tbsp Asda Sunolive Oil
- 1tsp fresh root ginger, grated
- 4 chicken breasts with skin on or chicken legs
- A few sprigs of thyme
- 1 head garlic
Method
1 Preheat oven to 190C/170C Fan/Gas 5. Cut the lemons into quarters and squeeze the juice into a bowl. Mix with the honey, oil and ginger, then put in an ovenproof dish – it should be large enough to hold the chicken portions in a single layer with a small gap between them.
2 Put the chicken in the dish and turn the pieces over so that they are completely covered in the marinade. Tuck the lemon wedges and thyme sprigs between them. Leave, skin side down, for about 30 minutes. Turn over.
3 Cut the garlic head in half horizontally and put in the dish. Cook in the oven for 35 minutes for breasts or 45 minutes for legs, basting occasionally with the juices.
