Suitable for vegetarians
Fantastically refreshing and really simple to make.
Ingredients
- 6 unwaxed lemons
- 700ml water.
- 125g sugar
- 200ml freshly squeezed lemon juice
Method
1 Thinly pare the zest of 6 unwaxed lemons using a vegetable peeler. Put in a heatproof jug and pour on 300ml boiling water. Stir and set aside for an hour.
2 Meanwhile put 125g sugar in a small pan with 100ml water and heat slowly until the sugar dissolves. Pour into a large jug and leave to cool.
3 Drain the infused zest through a sieve into the large jug and discard the zest. Add 200ml freshly squeezed lemon juice, 300ml cold water and some ice cubes. Stir well and serve.
