Chicken with spinach, raisins and pine nuts
A hearty dish that takes its inspiration from Morocco
Serves 4
Ready in 40 minutes
Ingredients
  • 180g bag Asda Baby
  • Spinach
  • 25g butter
  • 25g pine nuts
  • 2tbsp sultanas
  • 4 chicken breasts
  • 250g pack flavoured couscous

Method
1 Preheat oven to 190C/170C Fan/Gas 5. Wilt spinach in a large pan over a medium heat. Put it in a colander and squeeze the moisture out with the back of a spoon. Put in a bowl. Wipe pan, melt half the butter in it and add pine nuts. Toss until golden. Add to spinach with sultanas. Season.

2 Make a cut in the side of each chicken breast to form a pocket. Fill with the spinach mixture and put in a roasting tin, skin side up. Cook in the oven for about 30 minutes.

3 Meanwhile, cook the couscous as instructed on pack and then fluff up with a fork. Serve with the chicken.
