Salmon with minted pea and bean purée
A fresh idea for fish
Serves 4
Ready in 20 minutes
Ingredients
  • 225g frozen peas
  • 225g frozen broad beans
  • 4 spring onions, trimmed and sliced
  • 25g butter
  • 1tbsp fresh mint, chopped or 1tsp dried mint
  • 4tbsp crème fraîche
  • 4 skinless, boneless salmon fillets
  • New potatoes, to serve

Method
1 Boil the peas and broad beans for 5 minutes. Cook spring onions in half the butter until soft. Purée the peas and beans in a blender with the remaining butter, mint and crème fraîche. Stir in spring onions and season. Keep warm.

2 Lightly oil the fish on both sides. Pre-heat a grill until very hot. Grill the salmon for 3 minutes then turn over. Reduce the heat and cook for another 5 minutes or until cooked. Serve with purée and potatoes.
