Ingredients
- 2 aubergines
- 3 courgettes
- 2tbsp olive oil
- 2 x 125g packs Asda mozzarella
- 340g jar Asda Tomato and Garlic Sauce
- 6 basil leaves, shredded
- 50g mature Cheddar, grated
- Herb salad, to serve
Method
1 Preheat grill and oven to 190C/ 170C Fan/Gas 5. Cut ends off aubergines and courgettes. Cut aubergines into 1cm slices and each courgette into 3 slices lengthways. Brush vegetables with oil and grill until tender.
2 2Slice mozzarella and heat sauce. Spread a little sauce in the base of an ovenproof dish and cover with half the vegetables, followed by a layer of mozzarella and a sprinkling of basil. Repeat to use everything up.
3 Sprinkle the Cheddar on top and bake for about 30 minutes. Serve with herb salad.
