Buttercream biscuits
Suitable for vegetarians
These are simply irresistible and are so easy to make, too

Ingredients
  • 150g butter, softened
  • 50g caster sugar
  • 150g self-raising flour
  • 100g icing sugar
  • Few drops vanilla essence

Method
1 Preheat the oven to 180C/160C Fan/Gas 4. Line two baking trays with baking paper. Beat 100g of the butter with the caster sugar until creamy, then stir in the flour.

2 Take a piece of dough the size of a cherry tomato and put on a baking tray. Flatten with the back of a fork, dipped in cold water. Repeat, leaving a gap between each biscuit and bake for 15-20 minutes or until golden. Leave on the trays for 10 minutes then carefully move to a wire rack to cool.

3 Beat the rest of the butter with the icing sugar and vanilla essence until creamy. Just before serving sandwich the biscuits together with the buttercream.
