Lime, coriander and coconut pan fried salmon
An exotic dish that’s simple, speedy and stunning!
Serves 4
Ready in 20 minutes
Ingredients
  • 2tbsp sunflower oil
  • 2 garlic cloves, crushed
  • 1 red chilli, deseeded and finely chopped
  • 1 stalk lemongrass, finely chopped
  • 4 Asda lime and coriander salmon steaks
  • 400ml can coconut milk
  • Juice of 1⁄2 lime
  • 20g pack Asda fresh coriander, roughly chopped
  • Boiled fragrant rice and lime wedges, to serve
Method
1 Heat the sunflower oil in a large frying pan. Add the crushed garlic, chilli and lemongrass and fry over a gentle heat, stirring frequently, for 2 to 3 minutes until the ingredients are soft. Remove from the pan with a draining spoon and set aside.

2 Add the salmon steaks to the pan and increase the heat. Cook for 3 to 4 minutes, turning the steaks over once, until just golden and cooked on the outside.

3 Add the coconut milk and lime juice to the pan and season with salt and freshly ground black pepper. Return the garlic, chilli and lemongrass to the pan and gradually bring to the boil. Reduce the heat and simmer for 5 minutes.

4 Stir in the fresh coriander and serve straight away with the fragrant rice and lime wedges.
