A tasty bake that makes a delicious vegetarian meal

Ingredients
- 2 x 410g packs Asda Mediterranean-style Vegetable Medley with Herb Oil
- 400g can Asda Chickpeas, drained
- 500g tub Asda Creamy Cheese Sauce with Mature Cheddar
- 1 egg yolk
- 100g Asda Mature Cheddar, grated
- 2 slices brown bread, roughly crumbed
Method
1 Preheat oven to 200C/180C Fan/Gas 6. Spread vegetables on a baking sheet and brush with herb oil. Cook for 20 minutes or until golden around the edges.
2 Remove the vegetables from the oven and put into an ovenproof dish with the chickpeas.
3 Mix the cheese sauce with the egg yolk and pour over the vegetables. Cover with the cheese and breadcrumbs, return to oven and cook for 30 minutes until the sauce is bubbling and the topping golden. Serve with a green salad.
