Lamb pilaf
A Middle Eastern treat
Serves 4
Ready in 35 minutes
Ingredients
  • 500g pack Asda Lamb Mince
  • 1 medium red onion, chopped
  • 6 cardamom pods
  • 300g Asda Arborio Risotto Rice
  • 3tbsp sultanas
  • 1tsp ground cinnamon
  • 1 litre hot beef or lamb stock
  • 3tbsp pine nuts
  • Asda Greek-style Yogurt and chopped coriander, to serve

Method
1 Put the lamb in large saucepan and stir over a medium heat until browned and clump-free. Add onion and cook until soft.

2 Lightly press the cardamom pods until they break, then add to the pan with the rice, sultanas and cinnamon. Add stock and heat until simmering. Cover for 20 minutes, stirring regularly, until the rice is tender and stock is absorbed.

3 Put the pine nuts in a dry frying pan and toss over a medium heat until browned. Serve the pilaf with the pine nuts, Greek-style yogurt and coriander.
