Ingredients
- 350g linguine
- 4tbsp olive oil
- 1 bulb fennel, very finely shredded
- 1 large red chilli, deseeded and finely chopped
- 2 x 170g cans Asda Chunky Crabmeat, drained
- 3tbsp parsley, chopped
- 1 grapefruit, segmented and cut into bite-sized pieces
Method
1 Cook the linguine in a pan of boiling, lightly salted water.
2 In another pan, gently heat the olive oil. Add the fennel and fry for 4 minutes until slightly softened but still retaining a little bite. Add the chilli and crabmeat, and gently fry for 2 minutes more.
3 Drain the pasta and add to the crab mix with the chopped parsley and grapefruit. Toss gently to mix. Season with black pepper and salt to taste and serve.
