A tasty homemade pie is the centrepiece of any picnic spread – just slice it up and dish it out

Ingredients
- 454g pack Asda Cumberland Ring Sausage
- 2 chicken breast fillets
- 1tbsp fresh thyme leaves, chopped
- 4 sun-dried tomatoes in oil, drained and roughly chopped
- 350g ready-made puff pastry
- Flour for rolling
- 1 medium egg, lightly beaten
Method
1 Preheat the oven to 190C/170C Fan/Gas 5. Using a small, sharp knife make a cut along the length of the sausage and then peel off the skin. Put the sausagemeat in a bowl.
2 Cut the chicken into small pieces, each about the size of a cherry, and add to the sausagemeat with the thyme and sun-dried tomatoes. Mix together – this is easiest done with your hands.
3 Divide the pastry into two pieces, one slightly larger than the other. Roll out the larger piece and use it to line a foil plate about 22cm in diameter. Fill with the meat mixture, shaping it to make a shallow dome.
4 Roll out the other piece to fit the top. Brush the rim of the base with beaten egg. Cover with the lid and press the edges firmly together to seal. Trim the edges and brush the top with egg. Make two slits in the top to allow the steam to escape.
5 Put on a baking tray and bake for 1 hour 15 minutes. Leave until cold and then take to the picnic in the foil dish.
