Ingredients
- 1 aubergine
- 1-2tbsp olive oil
- 4tsp red pesto
- 125g Asda Buffalo Mozzarella
Method
1 Preheat the grill to medium. Top and tail the aubergine and cut lengthways into 1cm slices. Brush both sides of the aubergine with oil and grill until tender, turning occasionally. Leave to cool.
2 Spread the slices with red pesto and cut each one in half lengthways. Cut the mozzarella into pieces and wrap in the aubergine with the pesto side inside.
