Warm tuna, bean and egg salad
Great for a light spring lunch
Serves 4
Ready in 15 minutes
Ingredients
  • 4 large free range eggs
  • 150g green beans, trimmed and halved
  • 1 x 290g can Asda mixed bean salad, drained
  • 1 x 185g can Asda tuna chunks in brine, drained
  • 3tbsp Asda Good for you! vinaigrette
Method
1 Heat a saucepan of water until simmering and boil the eggs for 8 to 9 minutes. Run under cold water, peel and cut into quarters.

2 Cook the green beans in a saucepan of boiling water for 3 minutes until just tender. Drain.

3 Stir the mixed beans in with the green beans, tuna chunks and eggs. Drizzle over the vinaigrette. Toss the salad gently and serve immediately.
