Thai broth
Fragrant and full of flavour
Serves 4
Ready in 45 minutes
Ingredients
  • 1 pack Asda Thai Selection
  • Pared zest and juice of 1 lime
  • 1 chicken stock cube, crumbled
  • 605g pack Asda Chicken Thigh Fillets, cut into bite-sized pieces
  • 400ml can coconut milk
  • 2tsp sugar
  • 2tbsp Thai fish sauce (Nam Pla)
  • 200g pack Asda Mangetout and Babycorn, halved
  • 100g rice noodles
  • Coriander sprigs, to serve
Method
1 From Thai veg, chop galangal, shallots, inner part of lemon grass and one garlic clove. Put in pan with zest, stock cube and 800ml water. Cover, simmer for 15 mins. Strain, return stock to pan.

2 Deseed and chop chillies from Thai veg. Add half to stock with lime juice, chicken, coconut milk and sugar. Simmer for 10 mins. Add fish sauce, mangetout and babycorn, simmer for 4 minutes. Add noodles, simmer for a minute. To serve, sprinkle on remaining chilli and coriander.
