ASDA Recipes
Bacon and pea risotto
Satisfying and easy to make
Serves 4
Ready in 40 minutes
Ingredients
  • 2 x 300g pots Asda Chicken Stock
  • 1 medium onion, chopped
  • 2 x 250g pack Asda Bacon Chops, diced
  • 1tbsp olive oil
  • 350g Asda Carnaroli Rice
  • 2tbsp fresh thyme, chopped, or 2tsp mixed dried herbs
  • 300g Asda Frozen Garden Peas
  • 50g Parmesan, grated or shaved
Method
1 Add boiling water to the stock to make it up to 1½ litres. Then keep it simmering in a pan. Cook the onion and bacon in the oil in a saucepan for 10 minutes. Add the rice and stir over a low heat for a minute. Add 250ml of the stock, stir and simmer until it’s absorbed. Add another 250ml of the stock along with the thyme, stir and simmer until it’s absorbed. Continue in the same way until the rice is tender – 20-25 minutes. Add the peas for the last 5 minutes.

2 Stir in half the Parmesan and serve the rest on top.
