Strawberry toasts
Suitable for vegetarians
An indulgent breakfast or teatime treat

Ingredients
  • 454g strawberries, stems removed and halved
  • 4tbsp caster sugar
  • Pinch ground cinnamon
  • 4tsp balsamic vinegar
  • 2 medium eggs
  • 4tbsp full-fat milk
  • 50g unsalted butter
  • 4 thick slices brioche bread

Method
1 Put strawberries in a large bowl. Sprinkle 2 tablespoons of sugar on the strawberries and leave at room temperature for 1 hour. Mix the remaining sugar with the cinnamon. Set aside.

2 Sprinkle balsamic vinegar on the strawberries and leave while you cook the toasts.

3 Lightly beat the eggs and milk together in a shallow dish.

4 Melt half the butter in a frying pan. When foaming, take as many pieces of brioche as you can fit in the pan, and dip each side in the egg mixture. Put in pan and cook for 1-2 minutes on each side until golden. Set aside, then add the rest of the butter to the pan and cook the remaining brioche.

5 Cut each slice of brioche into 2 triangles. Put 2 triangles on each plate, dust with cinnamon and sugar. Serve the brioche immediately with the strawberries.
