Ingredients
- 15g butter
- 1tbsp olive oil
- 100g chestnut mushrooms, sliced
- 50g baby spinach
- 4 large eggs, lightly beaten
- 50g Asda grated mature Cheddar cheese
Method
1 Preheat the grill. Heat the butter and oil in a nonstick pan. Fry the mushrooms for 4-5 minutes. Add the spinach and cook for 1 minute. Set aside.
2 Add the eggs to the pan, season. Cook for 4 to 5 minutes until the underside is golden and the egg is almost set, then scatter the mushrooms, spinach and cheese over. Cook under the grill until the cheese has melted. Cut in half and serve with crispy fried potatoes.
