Runner bean salad
Suitable for vegetarians
Cooking time 8 minutes
Ingredients
- 3 tablespoons olive oil,
- 1 tablespoon white wine vinegar
- 1 teaspoon Dijon mustard.
- 1 Garlic clove
- 1 shallot
- 1 tablespoon capers
- 450g runner beans
Method
1 Whisk together 3 tablespoons olive oil, 1 tablespoon white wine vinegar and 1 teaspoon Dijon mustard. Season, add a crushed garlic clove, a finely chopped shallot and a tablespoon of roughly chopped capers
2 Trim 450g runner beans and cut into 1cm pieces. Cook in simmering water for 5-8 minutes. Drain in a colander, rinse under cold tap for a few seconds. Toss in the dressing
