Salmon, potato and beetroot salad
A simple summer salad that’s rich in health-giving omega-3
Serves 4

Ingredients
  • 450g Charlotte potatoes
  • 4tbsp Asda Real Mayonnaise
  • 4tbsp Asda Natural Low Fat Yogurt
  • 2tsp Asda Creamed Horseradish
  • 2 x 150g packs Asda Extra Special Golden Roast Smoked Scottish Salmon Slices
  • 200g Asda Natural Cooked Beetroot (not in vinegar), peeled and cubed
  • 3 sticks celery, sliced diagonally
  • 60g pack Asda Extra Special Baby Watercress

Method
1 Simmer the new potatoes until just tender. Cool, then halve or quarter them, depending on size.

2 Mix together the mayonnaise, yogurt and horseradish, and season to taste. Stir in the cooked potatoes.

3 Flake the salmon and add to the potatoes, along with the beetroot and celery. Serve with the watercress.
