Making your own burgers is easy; these have a tasty Middle Eastern twist

Ingredients
- 400g pack Asda Organic Lamb Mince
- 2 shallots, finely chopped
- 1tsp ground cumin
- 3tbsp fresh mint, chopped
- 1 clove garlic, crushed
- 225g couscous
- 2tbsp olive oil
- 1 sweet pointed red pepper, deseeded and chopped
- 50g dried apricots, chopped
- 50g pine nuts, toasted
- Asda Tzatziki, to serve
Method
1 Mix the mince with half the shallots, the cumin, 1 tablespoon of the mint and the garlic. Season. Shape into 8 small burgers and chill in the fridge.
2 Put the couscous in a bowl. Pour over 450ml boiling water, cover with clingfilm and leave for 15 minutes. Fluff up with a fork.
3 Cook the rest of the shallots in the olive oil until soft. Add the red pepper and cook for 2 minutes more. Add to the couscous with the apricots and toasted pine nuts.
4 Grill the burgers for 4-5 minutes each side. Stir 1½tbsp of the mint into the couscous. Serve with the burgers and a little tzatziki, garnished with the remaining mint, on the side.
