Apricot tart
Suitable for vegetarians

Ingredients
- Ready-rolled puff pastry
- 25g butter
- 25g caster sugar
- 1 egg
- 25g ground almonds
- 1tsp plain flour
- 4 apricots
Method
1 Cut out a 20cm round from a sheet of ready-rolled puff pastry and put it on a baking tray.
2 Beat together 25g butter, 25g caster sugar, 1 egg yolk, 25g ground almonds and 1tsp plain flour. Spread on the pastry, leaving a 2cm border.
3 Halve and stone 4 apricots, arrange on top and bake at 200C/180C Fan/Gas 6 for 15-20 minutes.
