Blackberry oat bars
Suitable for vegetarians
Crunchy, chewy bars – perfect for breakfast, snacks or lunchboxes

Ingredients
  • 225g plain flour
  • 200g porridge oats
  • 250g butter, chilled
  • 175g caster sugar
  • 100g pecans, chopped
  • 300g blackberries

Method
1 Preheat the oven to 190C/170C Fan/Gas 5. Line a shallow cake tin, 25cm by 17cm and 4cm deep, with baking paper.

2 Put the flour and oats in a large bowl. Cut the butter into small cubes, add to the bowl and rub in with your fingertips. Stir in the caster sugar and pecans.

3 Spread two-thirds of the mixture over the base of the tin and press down lightly. Scatter the blackberries evenly on top and then sprinkle on the rest of the mixture. Press down lightly.

4 Bake for 40-45 minutes. Cut into finger slices while hot, but leave until the bars are completely cold before removing from the tin.
