A variation on a classic French recipe for clafoutis – traditionally baked in a large dish

Ingredients
- 15g butter
- 75g plain flour
- pinch of salt
- 50g caster sugar
- 2 large eggs
- 200ml full-fat milk
- ¼tsp vanilla extract
- 150g blackberries
- icing sugar, to decorate
Method
1 Preheat the oven to 180C/160C Fan/ Gas 4. Grease the holes of a 12-hole bun tray with the butter.
2 Sift the flour and salt into a large bowl. Stir in the caster sugar and make a well in the centre. In another bowl, lightly beat the eggs and then add the milk and vanilla. Gradually beat the egg mixture into the flour until you have a batter that is smooth and free of any lumps.
3 Pour the batter into the bun tins and put one or two blackberries in the centre of each hole.
4 Bake for 20-25 minutes. Allow to cool slightly in bun tins, then serve dusted with icing sugar.
