Rich chocolate mousse
Suitable for vegetarians

Ingredients
  • 200g Asda dark chocolate
  • 4tbsp black coffee, cold
  • 4 large eggs, separated
  • 1tbsp caster sugar
Method
1 Put 200g chocolate and the coffee in a large bowl. Stand it over a pan of simmering water, making sure that the bowl doesn’t touch the water. Leave until the chocolate has melted, stirring occasionally. Remove the bowl and put aside for 4 minutes. Lightly beat the egg yolks with 1 tablespoon cold water, then stir into the melted chocolate.

2 Whisk the egg whites in a clean, dry bowl until stiff peaks form. (If the bowl is damp or has a trace of grease in it, the eggs won’t form peaks.) Add the sugar and whisk until stiff again. Fold into the chocolate. Divide into 4 dishes and chill for 2 hours.
