Lamb and pumpkin curry
A wonderfully rich curry packed with the aromatic flavours of Thailand
Serves 4
Ready in 1 hour, 20 minutes
Ingredients
  • 2tbsp sunflower oil
  • 1 red onion, halved and sliced
  • 2 x 250g packs Asda Diced Lamb
  • 1 clove garlic, finely chopped
  • 3tbsp Asda Thai Red Curry Paste
  • 2tbsp Thai fish sauce (nam pla)
  • 1tsp brown sugar
  • 2tbsp lime juice
  • 400ml can coconut milk
  • 500g pumpkin (peeled and deseeded weight), cubed
  • 200g pack Asda Baby Corn and Mangetout
  • fresh coriander and boiled rice, to serve
Method
1 Heat half the oil in a pan, add onion and cook until soft. Remove and set aside. Add rest of oil to the pan and cook lamb in batches until brown on all sides. Add garlic and cook for 1 minute.

2 Return onion and all lamb to the pan. Add curry paste, fish sauce, sugar, lime juice, coconut milk and 300ml water. Cover and simmer for 30 minutes.

3 Add pumpkin. Make sure the liquid just covers it – if not, add more water. Cover again and simmer for 25 minutes.

4 Add corn and mangetout and simmer for 5 minutes. Garnish with coriander and serve with rice.
