Ingredients
- 1 shallot
- 1tbsp oil
- 300g can Asda Cannellini Beans
- 1tbsp Asda Thai Red Curry Paste
- 1 kaffir lime leaf
- 100g fresh breadcrumbs
- 2tbsp chopped coriander
- 1 egg
- Serve in buns with salad
Method
1 Cook 1 chopped shallot in 1tbsp oil until soft. Whizz in a processor with 300g can Asda Cannellini Beans, rinsed, drained and patted dry, 1tbsp Asda Thai Red Curry Paste and 1 kaffir lime leaf. Stir in 100g fresh breadcrumbs and 2tbsp chopped coriander. Season. Add a little beaten egg to bind.
2 Shape into 4 cakes, coat in plain flour and brush tops with oil. Bake on an oiled baking tray at 200C/180C Fan/Gas 6 for 20 minutes. Serve in buns with salad.
