Ingredients
- 125g plain flour
- 2 large free-range eggs
- 300ml semi-skimmed milk
- 2tsp thyme leaves, chopped, plus extra for sprinkling
- 2 small red onions
- 2tbsp sunflower oil
- 8 Asda Frozen Vegetarian Lincolnshire Sausages
Method
1 Preheat the oven to 230C/ 210C Fan/Gas 8. Sift the flour into a bowl and season well with salt and pepper. Add the eggs and a dash of milk, and whisk to make a thick batter. Gradually whisk in the rest of the milk. Stir in the thyme.
2 Cut each onion into 8 wedges. Put the oil in a small roasting tin and heat in the oven for 5 minutes. Put the sausages and onion in the tin, distributing them evenly, and cook for 8 minutes.
3 Pour over the batter and return to the oven for 20-25 minutes until risen and golden brown. Serve sprinkled with the extra thyme.
