Tasty, spicy and packed with protein – and this is so easy!

Ingredients
- 2 x 200g packs Asda Mangetout and Baby Corn
- 2tbsp sunflower oil
- 386g pack Asda Diced Chicken Breast
- 4 spring onions, trimmed, sliced
- 2 carrots, cut into sticks
- 410g pack Asda Ready To Stir-Fry Egg Noodles
- 150ml pouch Asda Sweet Chilli Stir-Fry Sauce
- 25g roasted peanuts, chopped
- 1 large red/green chilli, deseeded and cut into fine strips (optional), to serve
Method
1 Cut each baby corn in half. Heat the oil in a wok or large frying pan, add the chicken and stir-fry for 4-5 minutes or until browned.
2 Push the chicken to one side of the wok and add the mangetout, baby corn, spring onions and carrots. Stir-fry for 3-4 minutes.
3 Add the egg noodles and stir-fry for 1-2 minutes to heat, then add the sauce and heat until simmering. Stir in the peanuts and serve sprinkled with chillies, if you like.
