Not vindaloo as you know it, but more of a spicy, robust stew

Ingredients
- 3tbsp sunflower oil
- 2 x 350g packs Asda Good for you! diced pork
- 2 onions, halved and thinly sliced
- 4tbsp vindaloo curry paste
- 2 potatoes, cut into chunks
- 400g can Asda chopped tomatoes
- 2tbsp fresh Asda coriander, chopped
- Asda raita, Indian breads, mini poppadoms and pickles, to serve
Method
1 Heat 1 tablespoon of the oil in a large, nonstick frying pan, add the pork and brown for 5 to 6 minutes on both sides. Remove with a slotted spoon, and set aside. Add the remaining oil and onions. Fry gently for 15 to 20 minutes, until lightly browned.
2 Add the vindaloo paste and stir for 2 minutes before adding the reserved meat. Stir well, then add the potatoes, tomatoes and 200ml water. Season and bring to the boil.
3 Cover, reduce the heat to very low and cook gently for 1½ hours, stirring often, until the meat is tender. To serve, sprinkle with chopped coriander and serve with a mint raita, Indian breads, mini poppadoms and pickles.
