Begin the weekend with this Mexican delight

Ingredients
- 450g pork fillet, cut into bite-sized pieces
- 1 pack Asda Mexican Seasoning Mix
- 2tbsp sunflower oil
- 1 red onion, halved and sliced
- 1 red pepper, deseeded and sliced
- 1 yellow pepper, deseeded and sliced
- wheat tortillas, chopped chillies (optional), salsa, sour cream, guacamole and grated cheese, to serve
Method
1 Toss pork in Mexican seasoning until completely coated. Set aside.
2 Heat oil in a wok or deep frying pan and cook onion until soft. Add peppers and cook for 3-4 minutes, stirring occasionally. Remove vegetables, leaving any oil in the pan.
3 Add pork and stir-fry for 5 minutes until well cooked. Return vegetables to pan, and reheat. Warm tortillas as instructed on pack. Serve meat and vegetables in tortillas with side dishes of chillies (if desired), salsa, sour cream, guacamole and grated cheese.
