Ingredients
- 350g plain flour
- 1tsp ground ginger
- 100g ready-to-eat dried apricots, chopped
- 75g pecans, chopped (but reserve 8 for the top)
- 100g butter
- 50g soft brown sugar
- 100g black treacle
- 100g golden syrup
- 150ml milk
- 1tsp bicarbonate of soda
Method
1 Preheat oven to 160C/140C Fan/Gas 3. Grease and line a 2lb loaf tin with baking paper. Sift flour and ginger together. Stir in apricots and pecans.
2 Gently heat butter, sugar, treacle and golden syrup, stirring until butter has melted. Remove from heat and gradually stir in most of the milk, setting aside 2tbsp.
3 Make a well in flour and pour in treacle mixture. Stir with a wooden spoon until mixture is smooth. Mix remaining milk with bicarbonate of soda and stir in.
4 Pour into tin. Put 8 pecans on top. Bake for 1 hour 5 mins. Cool in tin for 10 mins. Turn out onto wire rack.
