Ingredients
- 6 clementines
- 400ml double cream
- finely grated zest of 1 lemon
- 2tsp lemon juice
- 3 Asda Extra Special Meringue Nests
- fresh mint sprigs, to serve
Method
1 Finely grate the zest and squeeze the juice of 1 clementine into a large bowl. Add the cream, lemon zest and lemon juice. Whisk together until the cream begins to form soft peaks.
2 Break the meringues into small pieces. Peel and roughly chop the rest of the clementines and fold half into the cream with the meringues.
3 Spoon into 6 glasses and top with the remaining chopped clementines and a sprig of mint.
